Red Ass Alligator

Ingredients
1 – 2 tsp Red Ass Original Dry Rub
1 pound of alligator tail, cut into 1-2 inch pieces
Orange juice -enough to cover alligator
2 TB olive oil
2 TB white sugar
½ cube butter

Directions
Cover the alligator in orange juice and soak in the refrigerator overnight.
Drain the OJ, reserving about 1 tablespoon.
Mix the meat with 1- 2 teaspoons of Red Ass Original Dry Rub.
Add the sugar and olive oil.
Cover and marinate for an additional 1-2 hours. Grill on a griddle with hot butter and reserved OJ until brown and the meat is caramelized. Note: On Colorado’s Front Range, you can find alligator meat at Tony’s Market.
