Ingredients
4 pieces defrosted cod fish fillets (20 oz)
1⁄2 teaspoon olive or canola oil
2 TB Red Ass Original Dry Rub
4 TB panko bread crumbs
Directions
Rub oil on fillets and place fillets in greased baking dish.
Sprinkle Red Ass Original Dry Rub on both sides of fillets (use more Red Ass Original Dry Rub for a spicy flavor, or less for less heat).
Drag each side of the cod through panko breadcrumbs. Let sit at room temperature while the oven preheats to 450 degrees.
Bake 8 to 10 minutes or until cod flakes easily when tested with a fork (make sure the fish reaches an internal temperature of 145 degrees.
Serve with lemon wedges and/or tartar sauce if desired.
