Ingredients
4 pieces defrosted cod fish fillets (20 oz)
1⁄2 teaspoon olive or canola oil
1 Tsp Brandon’s Dry Rub
4 TB panko bread crumbs
Directions
Rub oil on fillets and place fillets in a greased baking dish.
Sprinkle Brandon’s Dry Rub on both sides of fillets (use more Brandon’s Dry Rub for a spicy flavor or less for less heat).
Drag each side of the cod through panko breadcrumbs. Let sit at room temperature while the oven preheats to 450 degrees.
Bake for 8 to 10 minutes or until cod flakes easily when tested with a fork (make sure the fish reaches an internal temperature of 145 degrees.
