Happy Hummus

Recipe compliments of Red Ass Gourmet. Conifer, CO
Ingredients
1 (15-oz) can garbanzo beans (“chickpeas”), drained but reserve half the liquid
4 TB lemon juice
1 clove garlic
2 TBS tahini
1 1/2 tsp Red Ass Afterburner Seasoning
2 TB olive oil
1 or 2 pieces roasted red pepper (optional)

Directions
In a blender or food processor, chop garlic.
Add garbanzo beans to a food processor, reserving 1 TB of beans for garnish and blend.
Add lemon juice, tahini, and Red Ass Afterburner Seasoning Salt to the mixture. Blend until creamy – use extra liquid
from can if needed.
Transfer to a serving bowl. Drizzle olive oil over the top and add the extra beans as garnish.
Enjoy with pita, or try plain or garlic bagel chips and crisp vegetables like carrots.

(Hint: Use Hummus as a substitute for mayo on sandwiches or in a pita.)
