Darby’s Afterburner Salmon Fillets

(serves two to four)

Ingredients:

Four salmon fillets (frozen ones are fine – thaw them prior to cooking)
Olive oil (light oil for baking and sautéing works best)
Red Ass Afterburner Seasoning

You’ll also need:
Cast iron skillet
Spatula or tongs

Steps:
1. Thaw the salmon fillets.
2. Place on paper towels and pat dry.
3. Sprinkle Red Ass Afterburner on both sides of each fillet. Season according to taste.
4. Let sit a minute or two.
5. Meanwhile, heat two or three tablespoons of olive oil in a cast iron skillet until it sizzles. (Hint: heat the skillet for a little bit, then add the oil, then continue heating both.)
6. Cook the fillets on one side for 3 to 4 minutes at medium/high heat, then turn over and cook the other side for 3 minutes at the same temperature.
